Harvesting and Winemaking

The vineyards where the Santa Cruz de Alpera Azul White Wine comes from are strictly selected by the winery's team where most of them are vines with many years, with low yields and taking care of the health of the same since, focusing on these three factors, they get grapes with maximum quality. The grapes are harvested at night in a mechanized way so that the grapes arrive as cold as possible to the winery, avoiding light and high temperatures to prevent the clusters from oxidizing.

For its production only the Verdejogrape variety is used, so being a white variety it is decided to carry out a fermentation with a temperature that is around 13ºC, which will allow a greater production of aromas that will be reflected in the wine at the time of consumption.

In the middle of the fermentation process, this is paused with the use of cold, thus obtaining a product of low alcohol content with a natural sweetness, preserving at all times the carbon dioxide from the fermentation, which will result in a wine with a marked needle.

After the fining and stabilization process, the wine undergoes a final step before bottling: a blue food coloring E-133 is added to give it a striking color. Finally, the wine goes through an amicrobic filtration to preserve all its characteristics.
