The grapes are cooled to 3ºC. The bunches are sorted on a conveyor belt, destemmed and crushed. All must and grape juice in these first stages are gravity fed. The selected parcels of grapes undergo a period of skin contact, at 8ºC, to capture the favourable flavours of the skin.
After gentle pressing, the must is allowed to settle for 72 hours at 2ºC. Barrel fermentation continues until the wine is dry. The Semillon is fermented on natural yeasts and matured for 11 months in 30% new French oak, some older barrels and a 500 L barrel.
The naturally fermented Semillon, matured on the lees, gives a fuller mouthfeel and contributes to the complexity of the wine.
The palate is round, then dense and concentrated in the centre, with a saline element that gives the spice and citrus a tactile sensation reminiscent of an Old World version of this grape. This wine was vinified in a style that enhances the ageing potential of Semillon.
