Traditional Japanese method of "liquid fermentation". In open vats, at room temperature. Not filtered, but decanted, to preserve its characteristics (flavor, smell, color). The facilities are located in Liaoning province, in northeastern China. Exclusive use of organically grown soybeans. Ideal for cooking vegetables, plant proteins, soups and stews, making sauces and dressing salads, seaweed, fried vegetables, rice, breaded foods, meats and fish. Helps enhance flavors. Alternative to salt.
Ingredients: water, soybeans*, whole wheat*, sea salt, aspergillus oryzae (koji). *Organically grown.
