This sommelier decided in 1992 to return to his family's lands and make cider as if it were wine. He has 20 varieties of apple and 15 of pear on his land, which he cares for in detail under the parameters of biodynamic agriculture. The result, an incredible cider, with a fruity nose, clean with the smell of ripe apples. It has a long-lasting tannic finish with complex acidity.
