Soul de Saa is a red wine made from Caíño Tinto, Souson, Brancellao and Mencía in the D.O. Ribeiro, by the Lagar de Sabariz winery.
A blend of four varieties of red grapes native to the Ribeiro region. These are single varietal wines of Caíño, Sousón, Brancellao and Mencía, obtained from the Ribeiro Denomination of Origin and made in Sabaríz. They come from old micro-vineyards in the Ribeiro area, specifically in the village of Saa. This coupage is obtained from vineyards that grow on terraces with xabre soils, and are cultivated following the principles of biodynamic agriculture.
The grapes are carefully selected by hand and approximately 40% of the grapes are destemmed. Subsequently, the grapes are trodden with the feet and a natural fermentation is carried out in vats. The wine is then bled and transferred to French oak barrels with five years of use. Malolactic fermentation. No filtration, fining or stabilisation processes are carried out, and the wine contains no added sulphites.
Sight: This wine is presented in a dense and attractive ruby colour, indicating its intense character from the first glance.
