Aging

This Rosé Sparkling Wine De Nit has an aging in lees for a minimum of 18 months. It also contains organic cane sugar for the dosage liquor.

Production

This sparkling wine comes from an organic and biodynamic vineyard, where the vines are in goblet and double royat trellis. Compost is used to make biodynamic preparations and green manure is used as fertilizer. Once the bunches enter the winery, they go through a low-pressure pneumatic press. The Macabeo and Parellada are pressed separately, while the Xarel·lo and Monastrell are pressed together.

It then undergoes static settling at low temperatures. Finally, it ferments in stainless steel tanks by variety, with indigenous yeast from the vineyard. It is important to note that this sparkling wine is clarified with bentonite and removed from the bottles with a gyropalette.
