This wine can be called ice wine both for its production process and because the grapes remain in the vineyard until January, when they are finally harvested. The label on the bottle catches the eye, winking at the moment of the grape harvest by showing snowy fields.
It is a wine of intense amber color that has a lot of depth and personality in aroma, while on the palate it invites you to taste intense flavors, with a special prominence of stone fruit. Other hints of honey characterize it, without being cloying. It pairs well with cured meats and strong cheeses, especially.

Tasting notes:
This wine has an intense amber color that turns golden. On the nose, it is a white wine with great depth and personality; tropical notes of peach or apricot are appreciated. Also citrus and special notes that make it a truly unique wine.
On the palate, intense flavors and a special prominence of stone fruit. With a long finish, it is a sweet and fresh wine thanks to its acidity. Despite hints of honey, it is not cloying due to the contrast with the acidity and freshness.

Viticulture: organic and vegan.
Geology and soil: the vineyards are located on deep soils with little organic matter. They are very calcareous, sandy, and stony soils.
Production: the first step is to freeze the water, in order to obtain a higher concentration of sugars in the must - which must be pressed before the ice crystals break. The fermentation lasts about two or three months and is done in small stainless steel tanks.
Pairing: pairs perfectly with cheeses, especially strong cheeses; it can also be combined with cold cuts and even some chocolates.
