Terrafondada is a wine made exclusively from old mencía vines that grow in the same location. It was aged in a barrel made of destemmed oak, filled to the brim with hand destemmed grape berries, cut one by one with scissors by the petiole. The barrel is covered with plastic and secured with a rubber band, so that it is tightly closed and the clusters undergo carbonic maceration. Once the process is complete, the berries are crushed in the traditional way and pressed, and then undergo malolactic fermentation in a French oak barrel of three wines where it remains for 20 months.
