Production and Aging
Blanco Nieva is a young wine without aging, made with 100% verdejo grapes in the Nieva region, in Segovia.
The wine is made after a rigorous selection of the finest and most elegant must. It is made with grapes from old vines in goblet shape (20%) and vineyards on trellis over 15 years old (80%).
The maceration is done cold with 30% of the grapes, static settling, fermentation at 15ºC in stainless steel tanks for 23 days, resting on lees, clarification, stabilization at -4ºC, and filtration.
Tasting notes for Blanco Nieva
- Appearance: Blanco Nieva is pale straw-colored with highly developed greenish hues.
- Nose: aromas of white flowers and fresh fruit (peach).
- Pallet: good acidity, balanced, fruity, and tasty. Very fresh with excellent vitality. A treat.
Pairing
Blanco Nieva is ideal to accompany appetizers, fish, seafood, and even roast suckling pig in the Segovian style.
It is recommended to consume at a temperature between 8-10ºC. Keep it in an ice bucket during consumption to maintain the ideal temperature.
