White Wine Cima Mazacruz
The grape variety used is 70% Verdejo and 30% Sauvignon Blanc. It belongs to Vinos de la Tierra de Castilla.
The uniqueness of this wine begins with its production. After a manual harvest to select and remove clusters that have not reached excellent quality, it is mechanically harvested at night, taking advantage of the low temperatures.
The maceration is done cold pressing the clusters. And 50% of the wine ferments in new French oak barrels and later ages for 5 months; and the rest of the wine that does not undergo this process ferments at low temperatures, around 14ºC, in stainless steel tanks to maintain its aromatic power.
The production of White Wine Cima Mazacruz is 1,600 bottles.
The ideal serving temperature for this wine is between 12ºC and 14ºC.
