The White Wine Ossian belongs to the VT Castilla y León, it is made through organic viticulture with 100% old verdejo vines fermented and aged in French barrels in the cordel de las merinas.
The vineyard where the verdejo is grown comes from exceptional small estates. The grape comes from old hundred-year-old vines planted in goblet, with sandy soils characteristic of the Nieva area (North of Segovia).
Elaboration
Manual harvest in 15 kg boxes. Rigorous inspection on selection table. Whole clusters, not destemmed and very gentle pressing, low yield, using only the yolk musts. Fermentation with native yeasts. After alcoholic fermentation, the wine has remained in French barrels - 40% new, 30% of one wine, and 30% of two wines - to complete a nine-month Burgundian-style aging, with batonnage on its lees.
It is recommended to let the wine rest for 48 hours after transportation. Additionally, it is advised not to serve the wine excessively cold, between 12ºC - 14ºC.
