To make these non-alcoholic gins, they use the only rotating cone vacuum column still in the UK. This process ensures that the characteristic flavours and top notes are not lost during distillation. The original Whitley Neill Rhubarb & Ginger Gin is fed into the still and extracted into three separate streams: Water, Flavours and aromas present in Whitley Neill Gin, Alcohol.
At the end of this process, the water and flavours/aromas are blended, resulting in the recreation of the non-alcoholic "gin".
