It is a product derived from corn classified as pearl corn that belongs to the species Zea mays, L. The raw material, when it reaches the industry, undergoes a rigorous quality control, being classified and properly stored in its own silos. The product is obtained by automatic or manual scarification/degermination, which includes the following process: pre-cleaning, cleaning, husking and degermination of the grain, polishing (stone polishing) and finally sutamento (act of passing through the suta).
Yellow corn does not contain gluten, but it can cross-contaminate with gluten-containing foods during harvest and transportation.
