                Plantatio 2019 Pre-phylloxera arises from the collaboration between two essential names in oenology in Toro: Bernardo Fariña (Bernardo Fariña Creative Winemaking) and Esteban Sánchez Maillo. Together they give life to a project that transcends winemaking to become an act of preservation: the recovery of a pre-phylloxera vineyard, a viticultural heritage predating the devastation of phylloxera.
From these ancient vines, carefully cultivated with minimal yields of just 1000 kilograms per hectare, emerges a grape that is transformed through traditional vinification, as it was done in the Toro region in the past: whole clusters, not destemmed or crushed, spontaneous and slow fermentations, with gentle pressing for 19 days.
After three weeks of maceration and fermentation, the wine is pressed in a vertical press and transferred to a new 400-liter French oak barrel, where it undergoes malolactic fermentation and remains for 38 months without racking.
The result is a wine of deep and unique character, nobly expressing the soul of an irreplaceable vineyard. Only 833 bottles have been produced: a living testimony of the history, patience, and timeless elegance of Toro.
