Aire Sano is the main producer of the DOP Jamón y Paleta de Teruel, with 70% of the hams and 91% of the certified shoulders. From La Puebla de Valverde, it cures its pieces for a minimum of eight seasons with its own grain, complete traceability, and the cold air from the Teruel mountains as an essential ingredient.
