A Torna Dos Pasas Escolma 2021 is a red wine made in the D.O. Ribeiro by Luis Anxo Rodríguez, who founded a family-run winery in 1988 in Paixón, Arnoia. This wine is produced from Brancellao, Caíño Longo, Caíño Redondo, and Ferrol grapes, grown in old vineyards on sandy-siliceous soils. The harvest is performed manually, and each variety ferments separately in stainless steel tanks, using indigenous yeasts. Aging occurs for 12 months in new French oak barrels, followed by a minimum of three years in bottle. The production process highlights the wine's qualities, offering a complex and balanced profile, with polished tannins revealing refined aging notes. This wine reflects the seriousness and character of its creator.
