Baynos is a high-quality white wine produced by Bodegas Mauro in the Denomination of Origin (D.O.Ca.) Rioja, using the Viura grape variety that reflects the essence of the winery. Grown in small vineyard parcels, this wine stands out for its characteristic growth in clay-limestone soil, imparting a unique complexity to the grapes. Ongoing ecological practices, including biodynamic techniques and the use of animal traction, ensure the wine's authenticity and sustainability. With a controlled yield of 3,500 kg per hectare, the goal is to achieve maximum flavor concentration in each bottle. The alcoholic fermentation is carried out with native yeasts, adding a distinctive touch to Baynos. After 20 months of aging in French oak barrels, this wine reaches an unparalleled elegance, resulting in a limited production of only 2,882 bottles. On the nose, it presents a captivating profile with complex notes of ripe white fruits, floral hints, and oak touches that mesmerize.
