Carabibas Viña del Carpintero 2019 is an exceptional red wine produced by Bodegas Sierra de Cabreras in the Protected Designation of Origin (D.O.P.) Alicante. This wine is made exclusively from 40-year-old Monastrell grapes. The vines grow in calcareous-stony and sandy-saline soils, situated in a privileged region near Salinas, at 550 meters above sea level. The microclimate in this area favors a balanced ripening of the grapes due to the notable temperature variation between day and night. This, combined with high sunlight exposure and moderate rainfall, results in excellent quality clusters. The grapes are carefully hand-harvested in specially designed boxes weighing less than 15 kg, and only the best clusters are selected for vinification. During production, the must is transferred to stainless steel tanks through a careful filling and gravity-siphoning process. Malolactic fermentation takes place in barrels, with temperature carefully controlled to ensure optimal vinification. After vinification, the wine undergoes aging in French oak, which grants it a distinctive aromatic balance. Its medium-intense cherry color, along with complex aromas of sweet spices, wild herbs, incense, and ripe dark fruits, makes this wine an ideal choice to accompany meals or enjoy on its own.
