Champagne Jacquesson Cuvée 749 Extra Brut, with a main base from the 2021 vintage and a blend of Chardonnay, Pinot Noir, and Pinot Meunier. It comes from Grand Cru and Premier Cru parcels, with over three years of aging on the lees and a dosage of 2 g/l. It stands out for its freshness and mineral character.
Jacquesson Cuvée 749 Extra Brut belongs to the series 700, designed to express the personality of each harvest. Its main base is the 2021 vintage, and its blend includes approximately 60% Chardonnay, 25% Pinot Noir, and 15% Pinot Meunier, complemented by reserve wines matured in foudres. The grapes come exclusively from Grand Cru and Premier Cru parcels: 72% from Aÿ, Dizy, Hautvillers, and Champillon in the Vallée de la Marne, and 28% from Avize and Oiry in the Côte des Blancs. Fermentation is spontaneous in large oak tuns, with lees work and periodic bâtonnage, without clarification or filtration. After more than three years of aging on the lees, it receives an Extra Brut dosage of only 2 grams per liter. It presents fine bubbles, aromas of white fruits, citrus, and brioche, and a creamy palate with a salty and mineral finish. It is recommended to serve between 8 and 10 °C in a medium white wine glass or wide tulip. It pairs well with oysters, caviar, seafood, white fish, tuna tartare, and roasted fowl with morels.
