The vineyards, situated on clay-limestone soils at the foot of Mount Vermio, enjoy excellent sun exposure and the freshness of the mountain breeze. After manual harvesting, the grapes undergo spontaneous fermentation in temperature-controlled stainless steel tanks. The wine ages for 6 months in used French oak barrels, bottled without clarification or filtration to retain its organoleptic qualities. This wine serves as a gateway to the reds of Naoussa, with a surprising profile. In tasting, it exhibits a cherry red color with garnet reflections. The nose is complex, presenting notes of plum and cherry jam, along with spicy touches. On the palate, it has a balanced structure, with soft tannins and vibrant acidity. It pairs well with roasted meats, pasta dishes, and aged cheeses. It is recommended to serve between 16-18°C and to open or decant 30 minutes before consumption.
