Don Zoilo Fino is an exquisite sherry wine made by Williams & Humbert using the Palomino variety. With a cold fermentation process and biological aging under a flor veil, it offers a dry and elegant flavor, ideal for pairing with a variety of dishes.
Don Zoilo Fino is an elegant sherry wine that embodies the winemaking tradition of the region. Made by Williams & Humbert with the Palomino grape, this wine is produced from the must of the first pressing of the best vineyards. The process includes careful static cold decantation and fermentation at 22ºC. Fortification is done with the best wine distillates, achieving a degree of 15º. Aging is carried out through the Criaderas and Soleras method, where the wine matures under a veil of flor in traditional oak barrels for a minimum average of 8 years. As a result, Don Zoilo Fino becomes a very aged, “overripe” wine with notable complexity in aroma and flavor. Its golden, almost antique color is complemented by a piercing aroma reminiscent of flowers and almonds. On the palate, it is very dry, with a perfect balance of acidity and a robust body, offering an elegant and memorable tasting experience.
