The vineyards are located on a hillside at 650 meters altitude in the Vall d' Albaida. Sustainable viticulture. Sandy soil with sufficient coarse elements coming from a calcareous geological formation. Old vines of 40 years old. Low yield of 1.5 kg per vine or 12HL per hectare.
Selection of grapes in the vineyards during the harvest in 15 kg boxes. Cooling of the grapes at 4ºC for 24 hours. Fermentation in steel tanks under controlled temperature. Pumping over by hand. Total duration of fermentation and maceration from 20 to 25 days. We only use "flor" wine. Maturation in a selection of French oak barrels (second and third year) of 225L and 1,000L for 12 months.
