The white wine Lapola 2023 from the Dominio do Bibei winery is an excellent representation of the Ribeira Sacra denomination of origin. This wine is made through a careful process involving Godello (70%) and Doña Blanca (30%) from vines that are between 25 and 80 years old. Alcoholic fermentation takes place in French oak barrels, aging for 11 months on lees which adds complexity and creaminess to the wine. A portion of the production is aged in concrete tanks. Unlike many other wines, malolactic fermentation is not performed, maintaining its natural freshness. Moreover, this wine rests for 18 months in bottle without filtration, developing its unique character.
