Legaris Verdejo is an exceptional white wine from the D.O. Rueda, produced by the Legaris winery. This wine is made predominantly from Verdejo grapes (93%) with a touch of Sauvignon Blanc (7%). The harvest is performed at night to preserve the freshness of the grapes, which then macerate with their skins for 4-6 hours. This technique allows for the extraction of the desired flavors before pressing and undergoing static clarification. Its fermentation, done at controlled temperatures with selected yeasts, ensures an exquisite aromatic profile. Importantly, Legaris Verdejo does not undergo malolactic fermentation or aging, which allows the original flavors of the grape to express themselves purely. Visually, it displays a straw-yellow color with greenish reflections, clean and bright. On the nose, it stands out for its intensive aromaticity, filled with floral notes and white fruit with slight hints of fennel. On the palate, it manifests with good volume and persistence, rounded off by a characteristic bitter finish of the Verdejo variety. A wine that represents a new concept and expression of quality, perfect for pairing with fish dishes, seafood, or salads.
