This sweet wine is a meticulous blend of Tempranillo grapes from old vineyards ranging from 40 to 70 years, cultivated in quartzitic volcanic soils and clay-limestone grounds. The manual harvest and careful selection of bunches ensure a concentration of aromas and outstanding quality. The making process includes cold maceration at 2ºC for five days, allowing the natural passification of the grapes and the concentration of residual sugars without losing acidity. After controlled fermentation, the wine is refined for 3 months in new American and French oak barrels, granting it aromatic complexity and elegant notes. With 15.2% alcohol, it presents a deep cherry-red color with violet edges, accompanied by aromas of strawberry jam, cherry, and black licorice. On the palate, it is sweet and enveloping, with fresh acidity that balances the sweetness, offering a long and persistent finish. Ideal to serve between 10ºC and 14ºC, it pairs perfectly with grilled foie, blue cheeses, hearty stews, or dark chocolate desserts.
