Harvested by hand with a rigorous selection process, both in the field and in the winery. Fermentation for 8 days with 2 daily pumping over and controlled temperature (26º -28º). Maceration with skins for 21 days with light pumping over. Aged for 16 months in first year French oak barrels with light pumping over every 4 months.
