Pago la Jara is one of the most exclusive gems of the Telmo Rodríguez Wine Company, standing out in the prestigious Toro Denomination of Origin. This red wine is made from the Tinta de Toro variety, derived from Tempranillo, and is grown in five exceptional parcels totaling only four hectares of old vineyard located in Argujillo, Villabuena, and Morales. The grapes are hand-harvested, and the vintage is done using artisanal techniques, employing indigenous yeasts and fermentation in 3,000 kg oak vats. The aging takes place for 18 months in French oak barrels, in a delicate process that aims to preserve the freshness and typicity of the Toro terroir. This wine is ideal for lovers of reds with great structure and complexity, recommended to be decanted before serving at 16-18°C, pairing well with red meats and aged cheeses. Its production is limited, making it a coveted object for collectors.
