Since its inception in 2001, this project, founded by Xavier Bernet, has focused on creating high-quality wines and sparkling wines, renouncing the sale of family grapes. The wine is primarily made from xarel·lo grapes from young vineyards, which adds freshness and local character to each bottle. The harvest is done manually, ensuring the grapes are picked at their optimal ripeness. The production process begins with pressing the must, which ferments for about 20 days. After that, the wine rests for about 5 months before the second fermentation in the bottle, a process that lasts about 45 days, followed by a minimum of 18 months of aging.
