Pazo San Mauro Albariño 2025 is a high-quality white wine from the Rías Baixas denomination, known for its exceptional character and freshness. This wine is made exclusively from Albariño grapes grown in our own vineyards, which span 30 hectares in the historic pazo dating back to the 16th century. The vineyards are situated on pebble terraces and sandy soils along the Miño River, providing optimal conditions for cultivating this native variety. The grapes are hand-selected and vinified in three different ways to maximize expressiveness: one part is destemmed and cold macerated to extract aromas and structural compounds; another part is vinified whole, contributing freshness and identity; and the last part is processed immediately after destemming to preserve acidity, resulting in a fresh and balanced wine on the palate.
