The grapes are hand-selected and vinified in three different ways to maximize expressiveness: one part is destemmed and cold macerated to extract aromas and structural compounds; another part is vinified whole, contributing freshness and identity; and the last part is processed immediately after destemming to preserve acidity, resulting in a fresh and balanced wine on the palate.
