Shannon Rock'n'Rolla Pinot Noir is an exquisite red wine that reflects the commitment and winemaking tradition of Shannon Vineyards, located in the Elgin Valley Wine Region of South Africa. This wine is made exclusively from the Pinot Noir variety, sourced from the estate's oldest vineyards, ensuring its quality and authenticity. The making of Shannon Rock'n'Rolla begins with the harvesting of Pinot Noir clusters, which are cooled to 3ºC before being carefully sorted and destemmed. Each berry is hand-selected, ensuring that only the best are used for cold maceration, a process lasting between 3 to 6 days at controlled temperatures of 8ºC. Fermentation is carried out using wild slow-fermentation yeasts, a method that highlights the wine's uniqueness. Fermentation temperatures range between 26 to 30ºC, allowing the wine to develop its complex flavor profile. After pressing, the wine is transferred to complete its malolactic fermentation, followed by careful maturation in oak barrels. This Pinot Noir is a manifestation of quality and elegance, combining a luminosity in its bright red color with vibrant flavors of raspberry, strawberry, currant, and cherry.
