The Standish 2020 is an Australian red wine made by Dan Standish from 100% Shiraz from the Laycock vineyard in Greenock, Barossa Valley. It comes from century-old ungrafted vines on ironstone gravel and schist soils over red clay. The vintage saw very low yields and grapes with great concentration and freshness. Winemaking includes native fermentation in open vats, with 30% whole bunches, followed by 20 months in French oak barrels. It shows a deep garnet color with violet hues and aromas of black plum, blackberries, violets, earth and spice. On the palate it is dense and concentrated, with silky yet firm tannins, balanced acidity and notes of licorice and cocoa. It scores 98 points from James Suckling and 96 points from Robert Parker's Wine Advocate. Aging potential is stated to be over 20 years. Serve between 16 ºC and 18 ºC in large Bordeaux-style glasses and decant for at least 2 to 3 hours before drinking. Pairs with mature red meats, game, structured stews and artisanal aged cheeses.
