The Standish The Schubert Theorem 2020 is a Shiraz red wine from Barossa Valley, Australia, made by Dan Standish from old vines, mainly from Marananga/Roennfeldt Road. Its production selects and reassembles different parcels from the Schubert vineyard. Deep purple-red in color with violet highlights, it offers aromas of blackberry, blueberry and cassis, along with Asian spices, licorice, dark chocolate and wild violets. The mineral backdrop recalls graphite and iron earth, with smoky notes. On the palate it shows medium to full body, silky texture, polished and creamy tannins, and acidity that balances the fruit concentration. The finish is persistent, with ripe dark fruit, spices and mineral nuances. Very limited in production, it can be enjoyed now with decanting or cellared until 2045. Serve between 16 °C and 18 °C and decant for at least 2 to 3 hours. A large Bordeaux or high-volume Syrah/Shiraz glass is recommended. It pairs well with grilled red meats, game, roast suckling lamb and aged hard cheeses.
