Villa Moncigale Cicada la Légende is an exceptional rosé wine made in Aix-en-Provence by the renowned winery Villa Moncigale. This wine is a unique blend of varietals: Cinsault (35%), Grenache (35%), Syrah (25%), and Cabernet Sauvignon (5%). Its terroir, characterized by calcium-rich clay and small limestone stones, allows for optimal water control, resulting in high-quality grapes. Harvesting takes place at night, and the grapes are pressed immediately to preserve their freshness. The juice is cooled at low temperatures for seven days to stabilize it and enhance its aromatic notes of citrus and exotic fruits. Additionally, the fermentation process in stainless steel at low temperatures ensures the freshness of the flavors. This wine ages for 3 months on its fine lees, contributing to its complexity and balance. When looking at its beautiful pale pink color, the nose is delighted with aromas of red fruits and white flowers. On the palate, it is fresh, balanced, and has a pleasant saline note. Ideal to enjoy as an aperitif or pair with seafood and raw vegetables.
