Viña Dammis Confidencial is an exceptional white wine produced in the Rueda Denomination of Origin by Viña Dammis, conceived as a unique and radically different project within the world of verdejo. It is an artisanal and extremely limited creation that breaks away from conventional timings, processes and norms, resulting in a wine of deep, intimate and singular character.
Made exclusively from free-run juice, Confidencial goes directly from vineyard to barrel, without machinery or technical intervention, respecting the natural silence of the wine. Fermentation and ageing took place underground in French oak barrels for sixteen months, without temperature control, allowing nature to set its own pace and shape the wine’s evolution spontaneously.
As an essential part of the project, each bottle was buried two metres underground, where it remained for eight months in complete darkness, free from vibrations or temperature fluctuations. This underground ageing process gives the wine a unique dimension, enhancing its stability, aromatic depth and balance, in an almost mystical setting where earth and silence act as its sole guardians.
Viña Dammis Confidencial was conceived and developed as a secret project, neither communicated nor shared throughout its entire production process. Only 224 numbered bottles exist, making this verdejo an unrepeatable wine, created for collectors, lovers of singular wines and consumers seeking truly exclusive experiences among high-end white wines.
In appearance, it shows a clean, bright golden yellow colour with subtle reflections that suggest depth and slow evolution.
On the nose, it is complex and profound, with aromas of ripe white fruit, hints of hay, dried herbs and balsamic notes, integrated with elegant touches of fine oak, soft spices and a mineral background that adds seriousness and character.
On the palate, it is a structured, broad and enveloping white wine, with a creamy texture and perfectly integrated acidity that brings balance. The finish is long, serious and elegant, leaving saline, spicy and lightly toasted sensations that reflect a unique winemaking process and a truly distinctive concept.
