Each of these varieties comes from carefully selected vineyards situated at altitudes varying between 750 and 1,000 meters and spread across 37 plots in 15 municipalities of this renowned Denomination of Origin. The winery works closely with local farmers, committing to a meticulous selection of the best grapes for vinification. The vinification process is natural, using gravity movement to avoid damaging the grapes. They arrive at the winery destemmed and whole for malolactic fermentation in both tanks and French oak barrels. The wine is clarified using natural egg white, which adds to its purity. With predominance of limestone and sandy soils, the Tomás Postigo Crianza matures for 12 months in 225-liter French oak barrels. The result is a cherry-red wine with garnet edges, bright and attractive in appearance. On the nose, it presents notes of mature red and black fruits like plum and blackberry, intertwined with mineral and floral touches, alongside a subtle background of toasted oak and chocolate. On the palate, it stands out for its great initial impact, followed by sweet, ripe tannins that make it round and flavorful. With a finish full of nuances, it is a wine that invites enjoyment.
