Tomás Postigo is made with 88% Tinto Fino, 6% Cabernet Sauvignon, 4.5% Merlot, and 1.5% Malbec grapes, selected vineyards located between 750 and 1,000 meters of altitude and among 37 plots in 15 municipalities of the Ribera del Duero.

This winery, without its own vineyards, carries out a selection process, in close collaboration with farmers in the area, of different plots and in different municipalities in pursuit of the best grapes.

Elaboration and aging

In the winery, the movement of the grape is by gravity, without pumps, gently. The grapes arrive destemmed and whole to the tank. Malolactic fermentation takes place in tanks and French oak barrels. Clarified with natural egg white.

Soils: Predominantly limestone, sandy loam soils with medium-sized stones and pebbles.

Aging: 12 months in 225-liter French oak barrels from different forests.

Tasting note by Tomás Postigo

  • Appearance: Tomás Postigo has a cherry red color, with intense garnet edges and a bright appearance.
  • Nose: Ripe red and black fruits such as plum, cherry, and blackberry, mineral notes like graphite combined with floral notes. Spicy with touches of pepper, subtle and integrated with aromas of toasted oak. Sensation of chocolate and balsamic background, consequently, a very attractive, elegant, and fresh wine.
  • Pallet: In the mouth, it is a wine with a great initial impact, but its sweet and ripe tannins and creaminess make it a tamed, round, ample, and tasty wine. Retronasal loaded with aromatic nuances and flavors that remind us of toffee and cherries in liqueur.

Pairing

Tomás Postigo is ideal for accompanying meat rice dishes, beef, and grilled red meats. Optimal serving temperature: Between 14 and 16ºC
