The preparation of matcha begins several weeks before its harvest. First, the tea plants are covered to hide them from the sun. This delays their growth and creates a darker green color in the leaves. With this process, the tea gains in amino acids, creating a sweeter tea.
After the harvest, the leaves are laid out on a flat surface for drying. The result is called "tencha". The stems and veins are removed before grinding them to achieve a fine powder texture like talc, of an intense green color, known as "matcha".
Only ground "tencha" produces matcha. Other ground teas are known as "konacha".
