Sweet, silky, with moderate acidity and a final vegetal bitterness that balances the sweetness and fills it with sensations.
It is an excellent wine to enjoy on its own or with desserts, blue cheeses, dried fruits, and pastries.
Our beginnings date back to 1844 when the family founded a small winery in an old mill known as La Noria, at the foot of the Castillo de Aguilar de la Frontera. At that time, wine was produced in a rudimentary way and sold in the family tavern.
In 1922, after several generations, José María Toro Albalá acquired and restored the old power plant of the town with the idea of moving the winery and storing wines to age for years and become true oenological gems. Thus, Bodegas Toro Albalá was established, marking the beginning of a true feat at that time and a philosophy that we have preserved over time.
With the generational change in the sixties, Antonio Sánchez gave a significant boost to the winery in search of differentiation and expressing a unique personality, betting on the vintage system and achieving unmistakable wines. Today, Bodegas Toro Albalá is considered one of the top 100 Spanish Gold Wineries and is found on the best tables worldwide.
Bodegas Toro Albalá is located within the D.O.P. Montilla-Moriles area. Framed within the great Andalusian wine regions known for producing fino wines due to the abundant presence of albariza soils.
One of the characteristics of this Cordovan region is the cultivation of Pedro Ximénez grapes, with which we make both dry and sweet wines. All of them come from new vines since the phylloxera crisis. Their adaptation to the region's climate makes them perfect for enduring the lack of rain and high temperatures during the summer.
From these small plots, we select the best lands for the cultivation, harvest, and production of our different wines. In the case of fino, amontillado, and sweet Pedro Ximénez (Don PX), it is strictly necessary that they come from the area of superior quality (Sierra de Montilla and Moriles Altos). The small lands in the Montalbán area are essential for sun-drying the grapes.
