Pre-maceration in cold for 4 days. Fermentation with indigenous yeasts and controlled temperature between 15 and 22 degrees. Grapes with stems 35% and destemmed 65%. Macerations ranging from 20 to 30 days depending on plots and tanks. Gentle extractions through pump-overs and délestage
