Flores de Callejo Roble is one of the flagship wines of Bodegas Félix Callejo, a family dedicated to viticulture since 1989 in Sotillo de la Ribera, Burgos. This wine is created with the goal of providing a fresh and fruity experience of Tinto Fino (Tempranillo), without losing the complexity that comes from approximately 6 months of aging in French oak barrels. The grapes used in this wine come from vineyards located at altitudes of 850-930 meters, favoring slow maturation and excellent acidity preservation. The harvest is manual, with a rigorous selection of the grapes, followed by fermentation using indigenous yeasts and controlled maceration, ensuring varietal purity. In the glass, it shows an intense cherry red color with violet reflections, highlighting its youth. On the nose, it is very expressive, dominated by red and black fruits, including cherry, blackberry, and blueberry, accompanied by floral and spicy notes, along with hints of vanilla. On the palate, it feels meaty and balanced, with a pleasant entry and good structure. The tannins are soft and well-integrated, and the finish is persistent, offering a fresh character that invites further tasting. Flores de Callejo Roble represents a wine that respects the vineyard, with minimal intervention in its production, seeking the perfect balance between fruit and wood. It is an ideal Ribera del Duero for both daily consumption and for introducing oneself to the wines of the region.
