This project, Gallina de Piel Wines, was created by renowned sommelier David Seijas alongside winemaker Marc Ripoll, aiming to offer a "Priorat 2.0", a wine that achieves a fresher and more accessible profile without sacrificing the typicity of the terroir. Its cuvée is made from old Cariñena and Garnacha vines, cultivated in the renowned slate soils of Gratallops. The vinification of Esclafit includes spontaneous fermentation, highlighting the natural characteristics of the grapes. A 10% of stems is added to Garnacha, and the wine is aged for 15 months in French oak barrels of second and third use, imparting subtle nuances without masking the fruit. On the nose, Esclafit offers an attractive bouquet of ripe black fruits, accompanied by notes of pepper, cinnamon, and licorice, inviting a complex sensory experience.
