On the Way is a wine that breaks away from the image of heavy reds. It is primarily made from Mencía (accompanied by small proportions of other local varieties such as Palomino or Doña Blanca, blended in the vineyard). The goal of this wine is fluidity and purity. Fermented with some stems (the grape's stalk) and aged respectfully in used barrels and clay jars, the result is a very "Burgundian" wine.
On the nose, it is a delight of wild red fruits, violets, and a pronounced earthy and mineral touch. On the palate, it is light, vibrant, with a citrus acidity that makes it dangerously easy to drink. It is a "thirst-quenching" wine, but with a complexity that invites contemplation.
