Massimo is an exceptional red wine that represents the winemaking tradition of the D.O. Ribeira Sacra, a project by Atlantic Galician Wineries aimed at highlighting the unique character of Galician wines. The wine comes from historic vineyards on century-old terraces in the Vilachá region, where heroic viticulture is manifested in the steep slopes of the terrain. These vineyards are lovingly cultivated from generation to generation, providing optimal conditions for the development of native varieties. The main grape used in Massimo is Mencía, complemented by a small proportion of Sousón, adding freshness and structure. The vines, which are usually over 30 years old, ensure greater concentration and quality. In its production, a traditional approach is followed that respects the character of the fruit. After a manual harvest, it is vinified in stainless steel tanks under controlled temperature to enhance its varietal expression and the Atlantic character of the wine. In certain cases, a pre-fermentation maceration is performed, intensifying the final product's aromatic quality.
