Ossian is a white wine from the V.T. Castilla y León denomination, produced by the renowned Ossian Vides y Vinos winery, part of the Alma Carraovejas group, in Nieva, Segovia. This wine is a 100% Verdejo single-varietal, noted for its origin in ecological vineyards, with vines aged between 100 and 200 years that are free from phylloxera, growing on their own roots. Its vinification follows a Burgundian style, where the must ferments with native yeasts in vats and French oak barrels, and then undergoes 9 months of aging on fine lees with bâtonnage. Aromatically, it is complex, presenting notes of ripe white fruits, citrus, sweet spices, and a marked mineral background. On the palate, Ossian is powerful and flavorful, with a creamy texture balanced by well-integrated acidity, and a long, persistent finish. Ideal for pairing with fatty fish, seafood, creamy risottos, white meats, and aged cheeses.
