The grapes from vines over forty years old are harvested with a slight overripeness and in good health. After a slight maceration, the must partially ferments and when the desired sugar content is reached, the fermentation is stopped with wine alcohol until reaching 15% ABV. Aged using the "solera and criaderas" method for a minimum of twelve years, it has a warm and silky character.
