Protos’27 is a tribute wine to the first vintage of the winery (1927), born from a 10-year research project to recover native yeasts and traditional techniques applied to current technology. It is a single varietal of Tempranillo from old vineyards (over 50 years old) located in the highest areas of the Ribera del Duero, with poor soils that ensure very low yields and exceptional concentration.
The wine undergoes fermentation with native yeasts selected by the winery and is aged for 16 months in new French oak barrels. In the glass, it presents a very intense cherry red color. On the nose, it is extremely complex, where ripe black fruit intertwines with notes of sweet spices, cocoa, mineral touches, and an elegant toasted background. On the palate, it is powerful, enveloping, and velvety in texture, with very well-integrated acidity and an extremely long finish. It is the perfect companion for hearty dishes such as grilled ribeye steak, Castilian roasts, and very aged cheeses.
