Each variety ferments separately at a controlled temperature in stainless steel tanks, which helps develop their organoleptic characteristics. The base wine is then blended and bottled for the second fermentation in bottle, where the bubbles are formed. This process takes place at 15-18 °C, and the cava ages on its lees for over 24 months, granting it the prestigious Reserva category.
