It is a starch extracted from the roots of the Pueraria lobata plant through a long artisanal process. Unlike the Arruruz variety, this is the one that serves both culinary and therapeutic purposes. The roots are ground, washed several times with water, and air-dried for ninety days. Kuzu has been used in Oriental Medicine for about 2,500 years.
