Gallinas y Focas 2022 from 4Kilos Vinícola is a Mallorcan wine born from the collaboration with Amadip Esment, an organization that supports individuals with intellectual disabilities and their families. Its members proposed the name based on "chickens are fun and seals applaud" and are involved in the label design. Made with 100% Manto Negro from 30-year-old organic vineyards, it comes from an especially warm vintage. The semi-carbonic maceration helped preserve its fresh expression. It fermented with indigenous yeasts and underwent 12 months of aging in 4,000-liter foudres and another 18 months in 500-liter barrels before being bottled in December 2025. These capacities correspond to the aging containers, not the bottle content, which is not specified. It offers floral aromas, red and forest fruits, rose petals, herbs, spices, and menthol notes. On the palate, it is flavorful and vibrant, medium-bodied, with fine tannins and good freshness. Serve at approximately 15–17 °C. It pairs well with cold cuts, meat rice dishes, pork, lamb, mushrooms, pasta with meat sauces, and grilled meats.
