Abadía da Cova Pedras Líquidas 2023 is an exceptional white wine from Adegas Moure, located in the historic Ribeira Sacra. This wine is made exclusively from the Godello variety, sourced from two small plots averaging 80 years old. The vineyards are situated on steep slopes along the Sil River, on granitic soils with slate presence, contributing to its distinctive mineral character. The south-southwest orientation and meticulous manual work allow for grapes of extraordinary concentration.
The winemaking process pays special attention to tradition and precision. The must is fermented in 500-liter French oak barrels, followed by five months of aging on its lees. This method adds volume and complexity, allowing the varietal character of Godello to express itself, resulting in a gastronomic white wine with a structured body and notable aging potential in bottle.
Sensorially, it offers an aromatic profile of melon, pear, yellow plum, and white flowers, with balsamic notes and elegant minerality. On the palate, it presents a broad and fresh structure, with well-integrated acidity that provides balance. The finish is long and persistent, with notes of ripe fruit and a saline sensation, making it perfect for pairing with seafood, baked fish, maritime rice dishes, poultry, and soft cheeses.
