Amontillado Leona is a fortified wine from D.O. Jerez-Xérès-Sherry made by Bodegas González Byass from 100% Palomino Fino from vineyards in the Marco de Jerez. It is part of the winery's historic "Solera 1847" range and is made following the traditional criaderas and soleras system.
This wine first undergoes a phase of biological aging under a veil of flor , typical of finos, and then continues its aging through oxidative aging , which allows it to develop greater complexity, concentration and aromatic depth over the years in American oak barrels.
The nose shows intense aromas of hazelnut, toasted almond and saline notes , accompanied by nuances of noble wood and light spicy hints. The palate is dry, elegant and very persistent , with good structure and a long finish where notes of nuts reappear. An ideal amontillado to accompany consommés, blue fish, white meats or cured cheeses.
